BBQ is one of my favourite types of food so you can imagine my excitement when I discovered the BBQ Cauliflower with Vegan Ranch Dip Recipe from Nora Cooks Vegan.
This recipe competes on the same level as traditional BBQ and is a really great option if you’re bringing a dish to a summer-time potluck. I must admit, the food options are something that I miss from my pre-plant-based life but once you discover more recipes, the options are limitless! This could pair perfectly with some Beyond Meat or bean patty burgers, a potato salad and skewer of veggies.
I used one large head of cauliflower and ran out of BBQ sauce because I did not have a full bottle. Be prepared to use at least 3/4 of a bottle because you use it on multiple steps. The recipes requires you to take the tray out of the oven more than once so I recommend only making this recipe if you have time. It is not a prep and bake once type of dish.
The ranch dip was incredibly simple and delicious. I used fewer cashews that meant to but that only really changed the consistency.
